After destemming, the stainless steel tanks are filled by gravity,followed by mash fermentation under controlled temperature. Malolactic fermentation and aging exclusively in new barriques for 18 months.Assemblage is performed 2 to 3 months before bottling, followed by at least12 months of bottle aging.
