After careful manual selection of the grapes, they are gently pressed to extract the highest-quality must. Fermentation takes place in steel tanks at low temperatures for about a month. The wine is left to age on its fine lees until bottling.

Ours is a family winery, now in its fifth generation. Our vineyards are located within a natural amphitheater on the highest Novara Hills in the municipality of Boca, on the rocks of a fossil supervolcano. The vines that grow on these soils produce structured and particularly mineral wines, with a characteristic acidity that gives them a long life in the bottle. To produce the youngest and fruitiest wines, we cultivate our vineyards in the municipality of Cella Monte, a charming village in Monferrato, a UNESCO World Heritage site.
