The harvest takes place at the end of August and is carried out by hand. After the pressing, the must and the skins undergo a period of 6-8 hours of maceration in order to extract a small amount of color and above all enrich the future wine with special aromas and fragrances. The second fermentation takes place inside heat-conditioned steel tanks for about one month, then the Sparkling Wine stays in contact with the yeasts for about 30 days during which it acquires aromas, softness and structure.

A small, family-run winery located in the Alta Langa area, Piedmont, Italy. We reached the Slow Food certification in 2016 for our Dolcetto d'Alba DOC, and we work to marry a natural approach to modern oenological techniques. So, we also obtained the National Integrated Production Quality System (SQNPI) paper, a testament of our effort in saving the unspoiled nature of these heroic hills. Our production is totally focused on heroic-viticulture. Slow food presidium since 2016.
