A vinification process that takes the name of overproduction. From the time when the bunches are pressed, up to the final step of the bottling, there is no contact with oxygen. This process allows to better preserve the varietal aromas and the quality of the final product.

A small, family-run winery located in the Alta Langa area, Piedmont, Italy. We reached the Slow Food certification in 2016 for our Dolcetto d'Alba DOC, and we work to marry a natural approach to modern oenological techniques. So, we also obtained the National Integrated Production Quality System (SQNPI) paper, a testament of our effort in saving the unspoiled nature of these heroic hills. Our production is totally focused on heroic-viticulture. Slow food presidium since 2016.
