The vinification is traditional for Grenache, for Syrah fermentation begins at low temperatures (18-20 °C) then is stabilized (24-26 °C). Carignan goes through carbonic fermentation.

Domaine Saint Antoine ligger i en av Frankrikes äldsta vinodlingsregioner, Haut-Minervois, där ett par som ursprungligen kommer från Berlin producerar viner som är formade av vinden och solen i södra Frankrike. De extraordinära vinerna växer i det ursprungliga landskapet i Minervois, som kännetecknas av sin Medelhavsvegetation och dess ursprungliga och mystiska karaktär. Domaine Saint Antoine har varit ekologiskt certifierad sedan sommaren 2022. Idag omfattar vingården 45 hektar, varav 27 hektar används för vinproduktion.
