Vinification, winemaker's own words
Soils:
Clay, Limestone
Terroir:
The vineyard’s elevation and strategic plantation orientation provide 360° sun exposure; the vines take root in porous, limestone flint bedrock which offers ideal drainage for the limestone-clay soil, and lends a touch of minerality to the wine. A clement micro-climate of moderate winters and warm, dry summers allows a long growing season and harvesting at maturity. The coteaux vineyards of Juillac have been cited since the time of the Romans for high quality terroir. The vineyard is bordered by woods, with a fruit orchard in the center; the surrounding prairies, forests and streams of the 100 acre domain foster indigenous bio-diversity. We are certified Haute Valeur Environnementale.

Winemaker:
John & Mary Sandifer
We harvested a select parcel of Cabernet Sauvignon at dawn, in cool temperatures to preserve the delicate, aromatic profile and prevent oxidation. We pressed the grapes immediately, using long, gentle cycles by pneumatic press to ensure minimal extraction, a pale pink color and delicate perfumes. Before fermentation the wine was maintained at a very cold temperature. At the end of fermentation we undertook a manual stirring of the lees to bring out a subtle gras (richness) on the palate and to balance the freshness of the acidity. In the winery, our modern stainless steel vats are custom-built for parcel driven vinification. Our family team ensures attentive, human-scale work.

Information
We are a French-American family making wine on this sunny hilltop overlooking the Dordogne River: a 100-acre estate where biodiversity is assured from the surrounding forests, meadows and streams. Our family has been here for 100 years, but wine has been produced here since the time of the Romans. The original winery and château on the riverbank were built in the 1700’s when barrels were rolled down to the river for expedition. Now in our 5th generation, we create our wine in a modern winery at the site of the vineyard. Our land produces Red wines of rich red and black fruit flavours and a Rosé that is perfumed and crisp. The terroir of flint bedrock lends a touch of minerality.
