Our family has been farming these soils since 1869. The house, with walls dating back over 700 years, has always been at the center of our work. Since 2007, we farm biodynamically across the entire estate, certified by Demeter. This includes not only our vineyards, all rooted in deep Löss soils close to our house, but also our small-scale agriculture. We maintain it to support a closed farm organism: compost from our own cows and sheeps is the only fertilizer we use. We’ve planted trees throughout our fields to foster biodiversity and resilience in the landscape. In the vineyards, everything grows in balance with nature. No irrigation. No synthetic treatments. Just attentive, thoughtful farming. In the cellar, we interfere as little as possible. Wild fermentation, no temperature control, no fining, no additives—only minimal sulfur and bentonite. We bottle when the wine is ready. That often means waiting—because we focus on structure and ripeness, and believe maturity brings out character. We make white and red wines, orange wines, rosé, Pet Nat, and sparkling. Always guided by what the vintage allows.
