Our boutique winery, nestled in the picturesque hills of Assisi, proudly produces high-quality Assisi DOC wines, a label we pioneered, as well as Umbria IGT wines and Organic Extra Virgin Olive Oil. With a legacy passed down through generations, we are committed to crafting exceptional products in an organic and sustainable manner. Our philosophy is grounded in a deep respect for the Earth and the health of our consumers, which is why we avoid chemicals in every step of production. We focus on reducing our carbon footprint by embracing innovative technologies and minimizing CO2 emissions, not only in the vineyards and olive groves but also in our winery.

Here’s how we achieve this:

* Manual intervention: All tasks, including pruning, hoeing, spring selection, and harvesting, are done by hand to ensure quality and care.

* Chemical-free farming: We use only natural copper and sulfur for treatments, with ongoing experiments to minimize their use to zero, utilizing new natural extracts, modern machinery, and weather stations to guide our approach.

* Renewable energy: Our winery and surrounding buildings are powered by photovoltaic panels, further reducing our environmental impact.

* Innovative production techniques: We prioritize physical processes over chemicals, using cutting-edge technology to create the most natural and pure products possible.

* Sulfite management: We avoid metabisulfites and powdered sulfites, using only minimal levels of gaseous sulfur dioxide—well below organic certification limits. This ensures that when you pour a glass of our wine, 90% of the sulfur dioxide evaporates, allowing you to enjoy the wine without any adverse effects.

* Eco-friendly packaging: Our wines are bottled in recycled glass bottles with natural cork closures—no screw caps or white glass bottles here.

* Strict certifications: We rigorously follow organic and DOC guidelines to guarantee the authenticity and traceability of every bottle.
