Terroir:
Saint-Paul grows on a sunny, south-facing hillside in Saint-Seurin-de-Cadourne, where red and blue clay soils give the wine its fresh, smooth style. The clay holds water naturally, helping the vines stay balanced even in warm summers.

Grapes are hand-sorted and fermented in concrete and stainless-steel vats over 30 days with gentle extractions — small remontages, pump-overs, and careful cap-wetting. Part of the malolactic takes place in barrel. The wine ages 12 months: one-third in barrels (20% new), the rest in vats, keeping purity, tension, and precision.
