Jordmåner:
Clay, Limestone, Sand
Terroir:
The Langhe’s soils are primarily composed of calcareous marl, clay, and sandstone, often interspersed with layers of sand and fossilized marine deposits. These soils are richer and more compact than those of nearby Roero, the varying soil composition across the hills contributes to subtle differences between vineyards and crus.

The harvest is entirely by hand in small red cases. It is one of the first grape varieties to ripen in the Langhe area. In recent years, the Dolcetto harvest has begun in the first week of September, when the grapes reach the right sugar content. Vinification first in stainless steel vats, then ageing in small oak barrels. 6 months of bottle refinement with controlled temperature before sale.
