Selective, early hand-picking of grapes that grow in typical cool climate vineyards into small 8 kg boxes. The grapes are carefully removed from the harvest boxes into the press basket and pressed at very low pressure. Only the middle fraction is used and then stored in used wood for several years. The cuvée is carefully assembled from the base sparkling wines of different vintages. After tirage filling, the Blanc de Noirs sparkling wine is stored on the lees for at least 36 months and then disgorged by hand without dosage at our winery.
