Early selective hand-picking of the grapes into small 8 kg boxes. The grapes are carefully removed from the harvest boxes into the press basket and pressed at very low pressure. Only the middle fraction is used and then stored in used wood for several years. The cuvée is carefully assembled from the base sparkling wines. After tirage filling, the Cabernet Sauvignon sparkling wine is stored on the lees for at least 18 months and then disgorged by hand at our winery with 4g dosage.
