Shallow, tuffaceous soils of volcanic origin, exceptionally rich in minerals, with a well-defined structure and a balanced texture leaning toward clay and silt.

Whole grapes are gently pressed, with only the finest juice selected. The must is then cooled to 8 °C before fermenting at a carefully controlled temperature of 15 °C to preserve freshness and aroma. Six months of ageing in stainless steel.
