Skin contact maceration for 12 hours. The musts are blended and undergo spontaneous fermentation in stainless steel tanks. Bottling of the still fermenting must following the Méthode Ancestrale. The resulting carbon dioxide integrates into the wine, creating fine effervescence. This PétNat was not disgorged, so it retains a relatively high amount of sediment in the bottle.
