After pressing, skins and pips are separated from the free-run must. Following clarification, the must ferments at controlled temperature. The wine rests on fine lees in stainless-steel tanks.

In Controguerra, the story behind Lidia & Amato stretches across nine generations of the Tavoletti family. Lidia launched her own project with Amato in 2003. Today, the Di Florio family carries that legacy forward, drawing on the meeting of Adriatic breezes and mountain air in the Colline Teramane.
