Hand harvested at the beginning of October. Cold maceration for 5 days (for greater extraction of color and fruit aroma),spontaneous yeast fermentation for 3 weeks. Additional maceration of one month after fermentation. AGEING Natural sedimentation and racking into oak barrique barrels of 225 liters! Aging for a minimum of 2 years
