Fermentation is carried out in small stainless-steel tanks using indigenous yeasts, with alcoholic fermentation reaching temperatures of up to 28 °C. As the wine is run off the skins, it is transferred directly into barrel, followed by a two-day post-fermentation maceration to refine structure. Malolactic fermentation takes place in barrel, after which the wine is aged for 24 months in fine-grain French oak with a single racking. Following barrel ageing, the wine rests for a further eight months in stainless-steel tanks to harmonise before bottling. No stabilization is applied, preserving the wine’s natural character.

Our dream is to create a great wine, based on our understanding of the vineyard, its terroir, and the native grapes of the Mencia varietal. An artisan production, a vigilant aging, evoking traditional consumption tied to the local culture, all without forgetting the latest trends and responding to changes rapidly and with a personal commitment. Our mission is to create a sustainable project, able to add value to our grapes, and allowing us to maintain and recover our vineyards to their best potential. Our vision is to grow and to create a specially designed winery to develop an artisan labour, becoming the high quality wine benchmark in Bierzo.
