Harvested 100% by hand. Low-pressure pressing with a large-surface press (COQUARD, champagne press). Produced from the core vintage, called CUVEE. Aged on lees for 6 years (disgorging is done by ourselves, which means the aging on lees is extended with each new arrival of bottles).
