Fermented with selected yeasts, with fermentation at 10–13 °C for a period of 9–12 days. Aged in stainless steel for 24 months and a minimum of 6 months in bottle. In summary: gentle pressing, maceration in the press for 8–12 hours, must clarification, fermentation and ageing in stainless steel tanks, followed by bottle ageing.

Information
The Canoso family has produced wine in Monteforte d’Alpone since 1876. In the 1970s, Giuseppe Canoso purchased the volcanic “Cà del Vento” hill, enabling the creation of a modern, eco-sustainable winery. With his sons, he focused on lower yields and higher quality, leading to the first bottled wines in 1990. A relaunch in 2016 brought new energy and a young, international team. Today, Canoso makes about 90,000 bottles from 12 hectares in the Soave Classico area, using minimalist, vegan-friendly methods that highlight the mineral-rich volcanic soils and elegant character of their grapes.
