Vinification, winemaker's own words

Soils:

Terroir:

We are in the plains, in the hinterland of Venice. Halfway between the sea and the mountains, where cool winds keep the air clean and ensure a good temperature range. The influence of the sea and the lagoon creates a mild climate. The soil, of alluvial origin, is clayey and rich in caranto, and only an experienced farmer can work it to its full potential.

Gentle pressing of the freshly harvested grapes followed by careful vinification with pre-fermentative clarification of the must. Fermentation with selected yeasts at a controlled temperature of 13 °C. Once alcoholic fermentation is complete, the sparkling phase takes place in an autoclave using the Charmat method.
