Vinification, winemaker's own words

Soils:

Chalk, Limestone

Terroir:

The particles are the n. 88, 89, 90 of 3.85 hectares planted with 100% Renano Riesling clone Heinz 65 Mosel. Monsaltus vineyard. The exposure is north-east and the soils are mainly calcareous and chalky and well drained. The plants are trained in Gujot with 5200 vines/hectare.

Manual harvest in 18Kg crates starting from the second week of September, the grapes are loaded into the press and protected with dry ice. Fermentation takes place in small stainless steel tanks at a controlled temperature. Starting from the month of March following the harvest and sold after 30 days in its maximum fragrance.
