Vinification, winemaker's own words

Terroir:

The particle is the n. 169 of 1.42 hectares planted with 100% Pinot Noir clone 386. Costagrossa vineyard. The exposure is north-west and the soils are marl-calcareous in nature. The plants are trained in Gujot with 4500 vines/hectare.

Manual harvest in 18kg boxes starting from the third week of August with direct pressing of the grapes fresh and fermentation and temperature controlled in small stainless steel tanks. The base wine is drawn the following spring. After at least 36 months of aging on its lees, degorged and subsequently marketed.
