Vinification, winemaker's own words

Soils:

Clay, Granite, Gravel, Limestone, Sand

Terroir:

A mix of vineyards on the mid-slope along the left orographic side of the Adda River and vineyards around 350–400 meters at the base of the slope on the right orographic side of the Adda River.

Winemaker:

Pressing of the grapes with separation from the skins. Settling by decantation of the grape juice. Fermentation at controlled temperature as a white wine for 10–12 days. Aging on fine lees from October to the end of January. This is followed by clarification rackings. Bottling takes place in June/July of the year following the harvest. At least 6 months of further bottle aging follow before release.
