After the tirage process with the start of a slow second fermentation in bottles, according to the traditional Franciacorta method, the bottles are stacked for at least 24 months. After the disgorgement stage, with the addition of a very dry liqueur de dosage (4g/liter), the Franciacorta undergoes another fining period in the wine cellar for several months.

Information
Die Familie Ricci Curbastro, deren landwirtschaftliche Tradition bis ins 13. Jahrhundert zurückreicht, bewirtschaftet das Weingut Rontana in Brisighella sowie das gleichnamige Weingut in Franciacorta. Von den 34 Hektar Gesamtfläche des Weinguts sind 32 Hektar mit Rebflächen bepflanzt, die nach den strengen Richtlinien des modernen Weinbaus und des Consorzio Vini Franciacorta bewirtschaftet werden, dem das Weingut seit seiner Gründung angehört. Im jahrhundertealten Park befindet sich der unterirdische Weinkeller, in dem die Gärungsprozesse und die langsame Reifung des Franciacorta stattfinden. In den Bauernhäusern des Weinguts ist das Weinmuseum untergebracht, eine in der Franciacorta einzigartige Einrichtung, die Tausende von Objekten bewahrt, die von der Arbeit vergangener Zeiten zeugen.
