In late August, the shoots of some garganega vines are cut. This cutting allows the grapes to go into drying and begin to dehydrate. We wait patiently for the grapes to be ready and then in late October they are harvested. The harvested grapes are put directly into the press. The cellar is still rich in yeast, the must after a few days begins to ferment very slowly. Wine aged in exhausted oak barrels.

Information
Siemàn ("six hands" in Venetian dialect) was born in Villaga, where organically farmed vineyards stretch across hilly terrain surrounded by woods. Healthy grapes are transformed into wine through spontaneous fermentation, without additives or treatments. In 2017, a brewery was added, focused solely on spontaneous and mixed fermentations using native vineyard flora. Most beers are also made with estate-grown grapes. Our passion is to honor the land by creating authentic products deeply connected to their origin, in harmony between Man and Nature.
