Whole clusters are gently pressed, with the free-run juice separated from the press juice. The must is briefly chilled to 8 °C before undergoing a temperature-controlled fermentation at 15 °C to preserve freshness and aromatic precision. Aged 12 months with 90% in cement and 10% in wood, followed by 18 months on the lees in bottle.

Das Weingut Marcazzan Fabio in San Giovanni Ilarione, östlich von Verona, spiegelt Generationen von Weinbautraditionen wider. Es wurde 2016 von Fabio Marcazzan gegründet und konzentriert sich auf die Herstellung von exzellenten Weinen durch den sorgfältigen Anbau von hochwertigen Trauben, insbesondere von über 50 Jahre alten Rebstöcken. Durch den Anbau auf vulkanisch-basaltischen Böden erhalten die Weine ein unverwechselbares Aroma und einen besonderen Charakter.
