Jacques Taisne
The grapes are harvested by hand in mid September. The bases wine is fermed in staillesssteel tanks at 18 degrees. The does not undergo malolactic fermantiotion. The second fermentation takes place in the bottle (Methode Champanoise). After the second fermentation the wine stays 36 months on the lees before it is discorged.
