Harvest by hand in the end of August. Selection of the grapes, cold fermentation to maintain the fruitiness. The must ferments in stainless steel tanks under temperature control. After the fermentation 10% of the wine goes into new barrels for 3 months. The wine in the barrel undergoes malolactic fermentation. The wines are blended and cold stabilized. The wine goes through a light filtration prior to bottling.
